Friday night I woke up with throbbing ears. Oh, no!!! I have a race and a Vegas vacation. I can't be getting sick. I couldn't go back to sleep, my ears hurt to much. Saturday morning, I called my doctor and no luck. They are open every other Saturday and this was not the Saturday. I call my allergy doctor and no luck there. They can't fit me in. I keep thinking my ears will get better, but no luck. They got worse and with no other option; I ended up in the emergency room on Saturday night. Sure enough, I have 2 raging ear infections!! I feel like I'm under water and can't hear very well, not to mention my ears are killing me with pain. I said a little prayer Saturday night and set the alarm for bight and early Sunday. My hubby joined me for the race. When I started training, I ran a 12 minute mile and it killed me to run 4 miles. Today was a little bit of a challenge, it was so muggy and my ears are still not back to normal. However, I set a new goal this morning and I did it!!! I finished the race in 39 minutes. With an average mile of 10:45. I'm so proud of myself. On our way home, my hubby and I decided to run a 10K. I know we can do it. Hope everyone had a great run. Now I'm off to Vegas. What a great reward. Viva Las Vegas!!!
The count down is on. I'm excited about the run on Sunday. I've done some trial runs in the neighborhood and I'm able to finsh. Hope I can do as well on Sunday. This has been a great program and I've loved training with you all. Good luck on Sunday. Can't wait to hear about everyones results.
My little boy loves going to Sonic for lunch. Since I have started this program, we have been going to Subway or eating at home. I've been doing really well, eating lots of fruits and veggies. Yesterday, Mason made a special request that we eat at Sonic for lunch. I was really hungry for the tater tots with chili and cheese. They are one of my favorite menu items. I checked out the nutritional info on line and decided that I would allow myself a small tater tots with chili and cheese. I took one bite and couldn't believe I use to like these. There was nothing wrong with the food........ it was just so heavy, greasy and yuck!! I ate about 4 bites and threw the rest in the trash. I felt bad the rest of the day. I had no energy and my stomach was not happy. I even had a really hard time running last night!!! I'm back to my fruits and veggies. I couldn't believe the huge difference 4 bites of yuck could make me feel. I use to eat that type of food all the time.......guess that is why I was 30 pounds heavier.
Well, I've been trying to think of something interesting to write all week. I can't come up with anything. The weather has been so nice, I can't help but want to be outside. I've been running after my hubby comes home from work. It has been such a nice treat. I've only been to the Gym one time this week and the rest of the week I worked out in the beautiful cool breeze. This week I have been eating really healthy, lots of fruits and veggies. I can totally tell that my body is loving the food. Last night my run was the fastest ever and I wasn't trying to speed up my time. It was great to run all 3 miles in under 12:00 minutes each. That is fast for me. Also, good news. Down 1.5 pounds this week!!! 5 more pounds to go to reach my goal weight.
Wow!! I can't believe my eyes. I have lost 4 pounds. I know it is not a huge number, but things have been crazy here for several weeks. I been doing all I can, but I always wonder if it is enough. Last week my little boy had his tonsils removed and we were stuck at home. This week we are stuck at home again potty training!!! I've been trying to eat healthier and light meals at night. Guess it is working. Only 6 more pounds to go!!! I know I can do it. The huge reward is Vegas!!! My problem lately is snacking. Since we are home; I feel I'm always sticking my hands in the pantry. I've decided to pull out a old recipe that I love. Hummus.......it is the best hummus recipe. Snacking on hummus with cucumbers, carrots and radishes are so yummy!!!
Here is my hummus recipe: ENJOY!!
1 (15 oz) can chickpeas, drained and rinsed
1 medium clove garlic, minced 3/4 teaspoon salt
pinch cayenne pepper
3 tablespoons lemon juice
1/4 cup tahini
1/4 cup extra-virgin olive oil
1/4 cup water
1/2 cup kalamata olives
Put all the above ingredients in a food processor and blend until smooth. Hummus will last in refrigerator for 2 days.
The weather is so beautiful here and should be this way all weekend. Can't wait to get outside: run, do yard work (or watch my hubby do the work), and jump on our new trampoline with my little boy.

Yesterday after a very stressful day of potty training. I left headed to Target for some shopping and found some cute shorts. I tried on the size 6, yes size 6 and they were loose. What a great feeling!!!
3rd Wonderful Motivation:
Las Vegas!! The day after our run, my hubby and I along with some friends are headed to Vegas. I've never been and can't wait. We found some great deals that we just couldn't pass up. Any suggestions on Restaurants, Shows and Spas???

Back to the gym. Last week I suffered from a horrible sinus infection. A visit to the doctor and twp prescriptions later; I feel back to normal. Last night it was raining, so I did my running at the gym. I love to people watch and the Gym is a great place to do so. On one side of me I have a woman on the tread mill at a level on 2.1 (walking speed) and she is chit chatting on the phone. Really?? If she hung up the phone and upped her speed on the treadmill, she could get so much more accomplished!!! I also love the guy on the other side of me who cranks his treadmill to speed 10 and kills himself running for literally 45 seconds. He then slows the treadmill back down to a 3.2. While at speed 3.2 he is leaning over the treadmill to regain his skin color (it is white after the hard run), and catch his breath. He is at this speed for about 4 minutes then cranks the treadmill back up to level 10 and runs so fast he is about to die again for 45 seconds and repeats this process. This is not the first time I've seen someone almost pass out on the treadmill from this crazy exercise. I also love the people who wear three layers of sweats and workout really hard. I'm guessing they want to shed water weight, but the funny thing is all of the people are very overweight and water weight is not going to do much good. Now, I do have to tell everyone, I'm no fitness expert. Maybe there are benefits to talking on the phone while walking at a slow pace, killing yourself by running at speed 10 for 45 seconds or wearing 3 layers of clothes. Never a dull moment at the gym.
Recipe for the Week:
Craving Fettuccine Alfredo?? Well, this is a AWESOME recipe that you can make in the microwave, I make it about once a week using a variety of foods.
In a microwave safe bowl combine one wedge of Laughing Cow Cheese and 1 tablespoon of low fat sour cream. Nuke for 20 seconds stir and add 1 teaspoon of grated Parmesan cheese. Mix in about 2 ounce of whole grain pasta (cooked). Dinner is served. This makes one portion. I double the recipe for my hubby. Also you can serve over Gnocchi, Yummy. I also like to add chopped ham and broccoli to make a more heartier meal.
This has not been a good week so far. I have a crazy sinus infection that has laid me on the couch and caused lots of problems. Who knew you could get light headed and dizzy from blowing your nose. Yeap, it is true, This is when being a stay at home mom is terrible. I'm sick and my little guy wants to play. I try, but can only do so much!! Needless to say, I haven't been to the gym or worked out since Saturday. Saturday, I walked for hours with friends shopping. When your shopping you don't realize how much you walk. I'll stop complaining. I'm headed to the doctor today and hopefully in 24 hours; I'll be back to my energetic self.
Taco Soup Recipe: (I had a request)
1 pound ground hamburger meat
1/2 onion chopped small
1 can corn (drained)
1 can Hominy (drained)
1 can Rotel tomatoes
1 can black beans (drained and rinsed)
1 package taco seasoning
1 package ranch mix
3-4 cans of water
Brown meat with the onion and fat drained off. Add the following ingredients and bring to a bowl. Serve and enjoy!!! Very hearty and yummy!!
I had a great week one. It was so nice to get out of the house and run. I felt great all week. My energy level was up and so was my mood. After exercising, I always feel so great. I ate really well and made several yummy recipes. My favorite recipe of last week was the Shrimp and Corn soup. It is easy and everyone thinks it delicious.
Here is my recipe:
1/2 bell pepper and 1/2 onion chopped into very fine pieces
1 package 1/3 less fat cream cheese
1 can 98% fat free cream of mushroom soup
1 can cream of corn
1 can chicken broth
1 pound shrimp, peeled
Cook pepper and onion in chicken broth until tender. Add cream cheese and mix well. Add mushroom soup and corn. Bring to a boil and add shrimp cook about 5 minutes and serve.
This week my goal is to drink more water!! It is my downfall. I'll continue with my workouts and eating light, Go Baby Weight Team!! We are making some great progress!!!
Yeap, it is today. My new shoes will hit the pavement. A good pair of fitted shoes have to be a runners best friend. I bought a regular pair of Nike shoes and they were killing my feet. I went to a speciality store and found out they weren't running shoes?!?! This is my second pair of good shoes that have been properly fitted to my feet. Every night my feet thank me. I'm so excited about this new training program. When I was training before, my workouts always consisted of running. I fell in love with running and hurt my in the process. So now that I will be able to cross train; I'm hoping to save my knee. Goal this week is to get moving and drink a lot more water. I'm making a yummy taco soup recipe. It is so yummy and when you omit the sour cream and cheese; it is really healthy. I love low fat recipes, so I'll post some of my favorites. (I'm guessing everyone has a taco soup recipe)
It is on!! Yes, I'm talking to you. My last 10 pounds. You have taken up residence on my thighs and stomach. On Feb. 15th, you my last 10 pounds, will get the eviction notice. In 2006, I lost 35 pounds on Weight Watchers!! I bought a new wardrobe and looked better than I ever had. I guess it was the new look that got me pregnant. Unfortunately, was on bed rest for at least half the pregnancy. I ate really healthy and didn't gain much weight. After my little boy was born I only had 10 pounds to lose to get to my previous weight. However, my baby was born 6 weeks early and after he was able to come home from the hospital I was unable to get out--he was on oxygen and a heart monitor for 6 weeks. I turned to my kitchen. I made cakes, cookies, creamy soup and lots of other goodies. I gained about 20 pounds. Once Mason and I were able to leave the house and I met some great mommy friends. I started having lunch dates, that added another 15 pounds. Last April, I decided it was time to get moving. I started running in my neighborhood and eating really healthy. I lost 30 pounds. November rolled around and with the holidays, I slowed down and fell off the wagon. I have 10 pounds to lose to reach my goal weight and I'm going to do it on 'Who Wants to Get Active? 2010'. I've never blogged before, so excuse all my mistakes. I'm excited to get to know everyone!! Lets all achieve our goals!!
