Dinner Ideas!

My boyfriend and I like to cook, but we don't have much time to prepare gourmet feasts since we both work full-time. It seems like we eat the same dinners over and over... our weekly menu usually goes: pasta, pizza, falafel, stir fry, baked chicken. Sometimes we add shrimp in.

What are some of your favorite (and fast!) things to make for dinner?? I'm determined to come up with some new ideas to get out of our dinner rut!

I have the same problem! My boyfriend and I both work full time as well and its a pain trying to be creative when you're tired from a long days work! So, if you're not vegetarian this may be good for you. This isn't the a terribly healthy dinner, but I've tried to cut out some of the fat by choosing "low-fat" (mostly just the meat) ingredients. My boyfriend and I absolutely love this recipe from his aunt, and it takes less than 45 min to make (I've never really timed it, may even be less than 30!):

Cheeseburger Rice

-2 cups white rice, cooked
-1 can chedder cheese (Campbells)
-1 package ground turkey meat
-honey
-worsechester (sp?) sauce
-ketchup
-mustard

-I usually start the rice about halfway through cooking the meat, so its hot when everything else is ready.
-I cook the turkey stove top, adding the worsechester sauce, some seasoning salt and garlic powder. As it gets a little more brown, give a it good squeeze of honey (there really is no exact amount, just do according to taste)
-after the meat is done, give a good squeeze of ketchup and mustard (again, to taste) and add the can of chedder cheese. You may even want to add a little milk, to thin out the cheese, but I've made it w/o milk as well, just as good. Oh, and when i say "to taste" I mean it will literally taste almost exactly like a cheeseburger ) Sorry i couldn't give more exact measurements! I've always just eyeballed it.

Once thats done, top off the rice with the meat mix, and voila! dinner! We like to add tobasco or any other hot sauce, to spice it up, however its very good without it!

Try these:

PASTA WITH SPICY SHRIMP AND SUN-DRIED TOMATOES
from epicurious.com

3 tablespoons olive oil
1 pound uncooked large shrimp, peeled, deveined
4 large shallots, sliced
3/4 cup sliced drained oil-packed sun-dried tomatoes
1/2 cup sliced pitted Kalamata olives or other brine-cured black olives
6 garlic cloves, chopped **I used a little bit more
1 teaspoon grated lemon peel **I added lemon juice also
1/2 teaspoon dried red pepper flakes **I increased this
1 28-ounce can diced tomatoes in juice, drained
1/2 cup chopped fresh basil
1 12-ounce package linguine
1 cup crumbled feta cheese

Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add shrimp and sauté until pink, about 2 minutes. Using slotted spoon, transfer shrimp to medium bowl. Add remaining 1 tablespoon oil to same pot. Add shallots, sun-dried tomatoes, olives, garlic, lemon peel, and crushed red pepper. Sauté until shallots are soft, about 4 minutes. Add canned tomatoes and simmer until sauce thickens, about 3 minutes. Mix in basil. Return shrimp and any juices to sauce; stir to heat through, about 1 minute.

Meanwhile, cook pasta in pot of boiling salted water until tender, but still firm to bite. Drain. Add pasta to sauce. Toss over medium heat until sauce coats pasta. Season with salt and pepper. Transfer to bowl; top with cheese.

Quinoa and Black Beans adapted from allrecipes.com

1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
1 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro
1 tomato, chopped


DIRECTIONS:
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer ~15 minutes.
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans, cilantro, and tomato.

I grill ribeye steaks under the broiler. I also saute flank steak or beef sirloin tips in clarified butter (ghee).

You can also bake salmon in the oven. I like the frozen fillets from Whole Foods (thaw in water in fridge overnight). 425 degrees for about 12-15 minutes depending upon thickness. Sockeye salmon contains a lot of natural fat so you do not need to put anything on it.

If you are eating for running try to stay away from a lot of sauces and creams and processed foods.

Some tricks to try....

Always have a container of washed & chopped veggies in the fridge. They can be munched with dip but they are also a good base for stir fry, soup, pasta, faijitas (sp?), etc. Get a steamer if you don't have one - put water in the bottom, dump in the veggies and in 10 minutes or so they are done (throw in to bought soup stock, wrap in tortillas...).

Canned tomato sauce, some of those steamed veggies and maybe some ground meat and you have pasta sauce.

Slow cooker - takes about 10 minutes in the morning to put a roast in with a splash of water & spice or some chopped meat & veggies and broth and flour for a stew - set to low and it's done when you get home. Throw in some converted rice or potatoes and everything is done. I usually just steam brown rice (takes an hour). You can do meatballs or chicken too.

Gosh, set a bread maker with a timer and you could even have fresh garlic bread when you get home.

Hamburgers are easy with oven baked fries (slice, spice with a splash of oil, bake 30 minutes at 400, flipping them halfway).

Chicken Fried Steak with Cream Gravy

Prep Time: 5 minutes
Cook Time: 10 minutes

Chicken Fried Steak:
Vegetable oil, for frying
36 ounces round steak
2 eggs
2 cups milk
2 cups all-purpose flour
1 teaspoons salt
2 teaspoons ground black pepper

Cream Gravy (a.k.a "Cowboy Puddin"):
1 cup canola oil
2 cups all-purpose flour
1 teaspoon ground black pepper
1 tablespoon salt
1 quart whole milk


To make Chicken Fried Steak: Heat a deep, heavy skillet with at least 1/2-inch of oil to 340 degrees F. Alternatively, heat oil in a deep fryer to 340 degrees F.

Cut steak into 1/2-inch thick slices to make 6 (6-ounce) portions and remove any fat or gristle. Pound it with the coarse side of a tenderizing mallet until it is double in size and half as thick. In a shallow bowl, make an egg wash by combining the eggs and milk. In another shallow bowl or pan, make a seasoned breading by combining the flour, salt, and pepper. Dredge the steak in the seasoned flour, dip it in the egg wash, and then return it to the flour and push the flour into the steak with your fingers so that there are no moist spots. Immediately slide the steak into the hot oil, in batches as necessary to prevent overcrowding, and fry on 1 side until golden and crispy; then turn over and cook the rest of the way. The steaks are done when you lift them with a pair of tongs and they are stiff, not floppy. Keep warm while making the gravy.

To make Cream Gravy: Mix the canola oil and flour in a saucepan and cook this roux over medium heat until it looks grainy and becomes slightly golden in color, just a couple of minutes. Remove from heat. Add pepper and salt and mix well. Add milk, return the pan to the heat, and increase heat to high. Whisk until mixture comes to a boil and thickens. Add hot water to thin, if gravy is too thick. Remove from heat to prevent scorching. The gravy should be as thick as pancake batter. Pour over chicken fried steak and serve.

You should ehck out the abs diet eating guide... there are tons of great recipes that are all high in good fats and good carbs. It is the perfect running nutrtion. All the meals are also really easy to cook :-)

We like to throw some boneless chicken breasts and salsa in our crock pot in the morning. Turn it on low and it's done by dinner. Especially yummy if you sprinkle a little (fat free) cheese on top. Yummy, fast, and healthy.

Oh, and don't forget Mexican night! Tacos made with ground turkey or Boca crumbles, or grill up some chicken, peppers and onions and make fajitas. Quick and tasty.

Grill salmon on BBQ or in broiler with diced garlic and olive oil on top.

dice cucumber (and deseed) into a cup or so of non fat plain yogurt (I use Nancy's) with some chopped fresh dill to taste. Have this dresing on the side with the salmon.
We usually do either a fresh green salad..or chop red bell, cukes, green onion etc and toss into cous cous for the side dish.
