Rhubarb

Looks like a bumper crop.....let's have your best rhubarb recipes, both healthy and not so much.

I made this last weekend with rhubarb from the Farmer's Market and had a slice for breakfast this morning after my run.

I make rhubarb sauce every year! It is wonderful and tastes good on toast, pancakes, waffles, or even frozen yogurt or ice cream!!!!

I'll dig up the recipe even though it is very simple.

Does anyone have a suggestion on where to buy rhubarb? I can't often find it in the typical grocery stores...and since I've moved back to PA from DC, I lost all my access to Whole Foods where rhubarb always abounds...

Boy I miss good fresh rhubarb... had it for years and years at my dad's house back in NY. Always a huge crop. I'd make a pie crust, mix the sugar/spice/flour mix, then go out and harvest some. Chop it up, rinse it, throw it in the pie shell, and into the oven.

Store bought - even farmer's market - just isn't the same... It loses something undefinable.

Simple but good

Use your normal pie crust recipe for a double crust pie (I use whole wheat flour)

For the filling:
Chop up enough rhubarb and fresh strawberries to heap up into the pie, use a ratio of 2:1 rhubarb:strawberries
Use 1 cup of brown sugar and enough flour to coat the fruit
Toss fruit, flour, sugar and some spices if desired; put into bottom crust
sprinkle on some lemon juice and some cut butter (optional)
Put on top crust, brush crust with milk

375 degree oven for approx 1 hour, until filling is bubbly and crust is cooked
