I am an ultra marathon runner and I eat very little meat. I find myself snacking on fruits, bananas and whole wheat pasta with tomatoes, mushrooms and peppers prior to a run. Before a race I eat a bagel and during a long run I swear by "goo"! I keep some in my "pouch" and it gives me that "extra" that I need.

Peanut butter is a good non-meat protein source!

you can make smoothies with protein powder and berries and lowfat milk. or use yogurt. I sometimes also add peanut butter or almond butter to a chocolate or vanilla shake, and banana! and if you really want to go for a healthy shake, add a little bit of milled flax seed (sounds gross but has good omega-3s).

Flax seed is a good call...one of those healthy oils people should make sure is in their diets!
