I am concerned about the use of diet here. Acuiring a vegan-esq diet is not an easy thing to do. I am a vegetarian and have to work hard at getting all the things i need for a healthy lifestyle.

It really is not a diet it is a lifestyle change. Please make sure to discuss changes this big with a doctor or dietitian.

Let me start out by saying that if it works for you keep it up.

I used to be quite a bit overweight. 265lbs at 5'10" I got with a personal trainer and changed my diet around as well as improving my strength and endurance.
I have found the "cleaner" you eat the better you feel. I think the elimination of "bad carbs" like bread, white rice, regular pasta has a lot to do with it.
I love fruits and vegtables but also like protien from lower fat sources like fish and chicken. I have eliminated much of what you have, but I consume about a gram of protien for each pound of weight I have. I don't know if a vegan diet can do it.
I'm a firefighter and need to maintain muscle, a low calorie diet would not just get rid of fat without robbing muscle. Through out my entire weight loss I maintained and grew muscle while loosing fat.
I'm at a stage where I am trying to put more muscle on, and intend on shedding more fat starting around the first of the year, so my diet has shifted again to consuming a bit more carbs then I was used to. The 800-1000 calories concerns me a bit. As I said before if it works for you I guess I wouldn't change it.
What I do know is that your diet has everything to do with how you feel and perform.
