My new obsession is "fake" BLTs. Mmmm... Fake bacon... My brother's girlfriend is also a veggie-saurus, and she recommended Morningstar Farm's bacon. (Not sure if it's vegan, but it's definitely vegetarian.) It looks like cardboard, so I was hesitant, but it sure smells and tastes like bacon! I don't do mayo (yuck!), so I use veggie cream cheese as a spread.

My husband's current favorite is couscous and stir-fryed veggies in a pita pocket. He makes everything into a sandwich...

hummus, cucumber, peppers, tomato (best in pita)
almond or cashew butter and honey
grilled or fresh veggies and prepared pesto (some kinds don't have parmesan cheese or make your own)
someone mentioned portabellos, those are awesome too esp if you marinate them first in oil, balsamic vinegar, garlic, spices, salt...

You can buy baked marinated tofu in the refrigerated section of the grocery store...(Or make your own if you're feeling ambitious)

I slice some up and place in a whole-wheat tortilla spread with hummus, add a big handful of pre-washed baby greens, and roll up.

Yes, I was just going to suggest this! Yum.

I also enjoy polenta and smoked tempeh with hummus on whole wheat pita.

Tofurky slices are wonderful too.

spread mayo (or avacado) on whole wheat bread, a couple slices of fresh tomatoes, a few slices of sweet onion and salt and pepper....yummy!!!!!!!

I'm a big fan of spreading peanut butter on a tortilla, sprinkling raisins on it and rolling it up to go. It's a fantastic portable snack, and you could sub other nut butters, dried cranberries, sprouts, seeds, etc.

hummus, tomato slices, lettuce, cucumbers, red pepper, and grated carrots and bread, of course.

tip: spread the hummus on the bread and then put the grated carrots on top of that so that they stick and dont fall out when you try to eat it!

My husband makes this most amazing sandwich for me:

2 slices wheat bread, smeared with artichoke tapenade, greek olive slices, tomatoes, and a few slices of parmesan cheese. So satisfying and filling!

these are vegetarian sandwich suggestions but you may have some vegan substitutes

scrambled eggs and asparagus (sprinkled w/ parsley or dill)
cheese, pear and black grape slices
cream cheese, pear, walnuts & maple syrup
cottage cheese or cream cheese with chopped nuts
chick peas or other beans mashed and lettuce
one of my faves is hard boiled eggs and green olives (finely chopped) with miracle whip (you didn't say healthy )

just get a bunch of core ingrediants and mix and match, stuff like sprouts, cucumbers, tomatos, avocados, mushrooms, olives, red and green peppers, carrots, lettuce and cheese.
