My recipe.

1 hammer

Smash repeatedly. Wipe up mess. Throw in garbage.

My second recipe.

1 Coconut prepared as above.
1 Grater.

Grate whatever is left. Bake. Burn.

When I was in Hawaii this summer, a hotel staff member climbed a coconut tree and chopped a few coconuts off. He mostly gave them to kids, but as I was standing around watching too, I got one as well. He opened it up with a machete for me. It took a surprising amount of work.

Fresh coconut juice is... well, ok. But really nothing special. Also, I understand, a laxative, in sufficient quantities. Still, it was fun.

back on a serious (well, sort of) note, housemates and i invented (or perhaps just think we did) a coconut-tastic drink this weekend by mixing roughly equal parts malibu, kahlua, and godiva chocolate liquer (id never had it,a friend brought it, pricey but orgasmic) and coconut milk over ice. might be as good as beer served in coconut shells!

'I wish I had know that sooner. I was in Danville on Tuesday. I would have stopped in for a piece! Perhaps next time.

Sorry, dickt! And they don't always have a specific kind of pie. The last time we were there, coconut pie was not on the dessert menu. Still, they do make a fine pie of any variety. I believe they're only open for dinner, too. You'll want to call ahead if you plan to eat there. It's rather small, although they have a bar downstairs for more casual dining, and I think it serves basically the same menu (I could be wrong about that).

Have you ever been to The Perfect Pear in Bradford VT? Bradford is north of Norwich on Rt. 5. They have some good food, too. Alas, I didn't see anything with coconut on the menu.

I'd hate for this to disappear, there are some great coconut uses here.

Coconut Muffins Recipe
Ingredients
3/4 cup flaked coconut
2 1/2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground mace
1 egg
1 1/4 cups milk
1/3 cup vegetable oil
1/4 teaspoon pure orange extract
1/4 teaspoon imitation coconut extract


Instructions
Preheat oven to 425 degrees F. Lightly grease or line twelve standard-size muffin cups. Set aside.

Spread coconut in shallow baking dish and toast in preheated 400 degrees F. oven 7 minutes or until coconut begins to brown. Remove and set aside. Do not turn oven off.

Sift flour, sugar, baking powder, baking soda, salt, and mace into large bowl. Set aside. In small bowl beat egg and stir in remaining ingredients. Add to flour mixture and stir just until dry ingredients are moistened. Some small lumps will remain in batter. Do not overmix.

Fill prepared muffin cups two-thirds full. Bake for 20 to 25 minutes or until toothpick inserted in center of muffin comes out clean. Remove from pan immediately and serve hot.

Yield: 12 muffins
