Lazy recipes Part I

Some of the recipes on this board sound so delicious it makes my mouth water. They also make my head spin thinking about having to buy many items I don't routinely keep in the house. I'm not a good cook and I'm lazy when it comes to cooking. I like to spend an hour on Sunday cooking as much of the next week's meals as possible.

For those of you like me, here's the first installment of my lazy cooking posts.

1lb. whole wheat penne pasta
1.25 lb ground turkey
2 cups regular flavor hummus
2 handfuls green olives chopped
1/2 onion diced.

Cook pasta, brown turkey, saute onion. Mix everything together. Tastes incredible.

Sorry, I lied...I'll post installment two here as well. Since we're on subject of hummus.

Broiled salmon
regular flavor hummus
Diced veggie of choice

Chunk salmon, mix with hummus to consistency of tuna salad. Spread on whole grain bread or pita.

Cooked brown rice (I always have some in the fridge), canned black beans (drained and rinsed), can of diced tomatoes with green chilies. Heat, add seasonings (like chili powder or cayenne pepper powder). Instant black beans and rice. Can use kidney beans, too.

A box of whole wheat pasta and 2 baked chickens (you can be over-achiever-like and cook the chicken on your own if you want).

Divide into 3 different batches of pasta and chicken then make 3 different sauces to mix in.

1. tomato sauce (very difficult to pour out of the jar)
2. parmesean sauce (once again, difficult to get out of the jar)
(serve #1 and #2 hot)
3. equal parts mayo, ranch, and sour cream and serve as a cold pasta salad, can add lemon pepper to tasts.

You can go as healthy as you want with the sauce and condiments you buy - I did all low fat or light and each serving (I get 6 servings total with a 6 cup box of pasta) is about 300 calories.

Ok, here is the easiest ever recipe for home made Mac 'n Cheese. My 9 year old can make this. Takes about 5 minutes to throw it together.

2 cups milk or low fat buttermilk (buttermilk tastes better)
2 cups cottage cheese
1 tbsp prepared mustard
1 cup grated cheddar (sharp is best)
2 cups uncooked macaroni noodles

grated parmesan cheese
dry bread crumbs

Puree the milk, cottage cheese and mustard until smooth (I use my stick blender in a bowl, regular blender would also work)

Stir in the cheese and noodles. Pour into a lightly oiled baking dish. Sprinkle top with grated parmesan and bread crumbs mixed together. Bake at 350 for around 45 minutes or until topping is yummy and brown.

I always make lots of the topping because my kids like it with extra "crunchy bits"

2# firm, white fish (bream or haddock)
1 jar corn salsa

Pour the salsa over the fish. Bake in a 350 oven for 20 minutes.

Chocolate-covered Spiders

1 package (11-12 oz) of milk or semi-sweet chocolate chips
1/2 bag, or one small can, chow mein noodles
1 1/2-2 c. lightly salted peanuts (the actual amount is a matter of personal preference)

1. Put chocolate chips in a microwave-safe bowl. Heat them on medium-high (about 70%) for 1 minute. Stir thoroughly. If the chips are not completely melted then heat for 10-15 seconds more and stir again. Repeat, if necessary. Note: Do not overcook the chocolate, it will get gross. If there are still a few lumps, just keep stirring. The chocolate will eventually even out

2. Pour in chow mein noodles and stir until completely coated in chocolate. Do the same for the peanuts.

3. Drop "spiders" by the spoonful onto wax or parchment paper and let them cool. Once the chocolate has set (about half an hour to an hour) they're ready to enjoy!

Ok, here?s another one. It does take a little forethought but the effort is still fairly small.

1 medium size spaghetti squash
4-8oz whole wheat pasta (I like spirals)
16-24oz jar of marinara sauce (reserve approx 1 cup)
1 bell pepper, diced
1-2 cans mushrooms (or fresh equivalent)
½ to 1 cup 2% milk shredded sharp cheddar
minced dried onions to taste
garlic powder to taste

Sometime before, cut the squash in half lengthwise, scoop out the seeds. Place cut side down in a baking dish, add ¼? water, bake at 350F for ~40min or so. Take out and when cool, scoop spaghetti squash out of shells with a fork. I?ll usually do this night before, but it does seem to keep well for a couple or three days.

Throwing together the casserole - cook the pasta al dente and drain. Mix well with other ingredients except reserved marinara and cheese. Spread into a 13x9 glass or porcelain baking dish (not sure how this will work with metal). Spread marinara over the top. Cover with foil and bake at 350F for 20-30min or until hot & bubbly ? remove foil and add cheese. Bake another 10 minutes or so or until cheese melts.

The ingredients amounts are all approximate as they just really don?t matter and depend on your particular taste.

Variation ? mix in cooked chicken sausage if you like, there are a couple precooked varieties I can buy here that I can cut up the links quickly. Or mix in a bunch of broccoli florets or other vegetable if you like.

We used to make these when I was younger. In addition to chocolate we used to also use butterscotch chips. Now that I think of it, you could also use white chocolate chips or peanut butter chips. Hmm... perhaps even a blend of peanut butter and chocolate chips. Tasty tarantulas they are!

Combo of meat/marinade- in the crock pot, low all day.
Some of my favs:
(chicken is about 4-6 hours on low, or 6-8 on warm if you have a newer crock and it is thawed)
Chicken/salsa
Chicken/broth/taco seasoning
Chicken/ff cream of soup
Chuck roast/onion soup mix and broth
Pork picnic/Stubbs pork marinade

Brown rice in the rice maker as soon as I get home, and steam some veggies when the rice is about half done. (My rice cooker has a steamer basket that sits above the rice). A variety of these can be served over some type of pasta also.

These meals are fast, healthy, and yummy.

Also, chili or split pea/ham in the crock pot are favorites.

Tilapia with Mango Salsa

Put filets in baking pan ~ you pick the number of filets based on your individual needs

Cover with Mango Salsa

Bake at 450 degrees for about 15 minutes

I get the tilapia and mango salsa from Costco.

Tonight I sprinkled some black beans on top of the fish and salsa. Served it with a side of refried beans, brown rice and corn tortillas to create fish tacos with. Oh, and fresh lime wedges to squeeze on top of tacos.

3-minute nachos.

Cover a plate with yellow corn tortilla chips (at TJ's, they are whole-grain and actually quite healthy). Drain a can of black beans and spread as desired over the chips (I use half a can for just me). Cover with salsa. Sprinkle with your favorite type of shredded cheese. Cook in the microwave for 2 minutes or until cheese melts.

Randy ... don't freak out as I know this might not go down well with you ... BUT I have made a similar thing with Fibre1 cereal. It works and is still **** good (oh, I added some salted PB to the melted choc. too).

Here's dinner for two that looks like it took a lot of time:

2 small pumpkins
2 cans of Campbell's Select Butternut Squash soup
package of Uncle Ben's Long Grain Wild Rice
Sour Cream
Chives

Hollow out the pumpkins really well and wash them.

Heat up the soup almost to boiling.

Make the rice according to package directions.

Pour the soup in the pumpkins and surround the pumpkins with the wild rice.

Garnish soup with a dollop of sour cream and a few chives.

Replace the top of the pumpkin as a "lid" to keep the soup warm.

That's it! It's really good on a chilly fall afternoon!
