Chicken Breast ideas?????

I broiled about 8 chicken breast to have at the ready for a quick and healthy snack/lunch during the next few days. What does everyone else do to "jazz" up their chicken so they don't get sick of the plain old chicken breast? Any ideas appriciated.

It's all about what you put with the chicken. I like to dice it and add to green salads. Or you could put it on bread or a bun with veggies for a sandwich. Maybe get a little BBQ sauce for dipping it in. My favorite lunch for awhile was grilled chicken with baby carrots and grape tomatos and a string cheese.

You could make fajitas. Frozen fajita veggie mix, some tortillas and salsa with your chicken breast. Or the same with baked potato instead of tortillas.

quick chicken tortilla soup

Saute some carrots, garlic and onion in olive oil. Add whatever veggies you like. I use corn, potatoes, squash, bell peppers. Some spices to taste. (cumin, chili powder, salt, pepper, season-all) Add a carton of chicken stock. A can of crushed tomatoes, A can of Rotel (tomatoes and green chilies.) Then throw in some of that broiled chicken.

Simmer till done. The longer this cooks, the better it tastes. It freezes well, and tastes even better the next day.

If you are scared of spicy, just omit the chili powder, and use the mild rotel. I guess that would be okay.

Serve with avocado, and crushed tortilla chips on top.

Sprinkle w/ citris grill seasoning, wrap in foil,and bake.

Sprinkle with garlic powder, salt, pepper, Italian seasoning bake. Could also add onions and green peppers to that and then wrap in foil.

Here is an awesome salad I recently started making. Bake corn tortilla till crisp 375 degrees is what I bake them at. Cut raw chicken in chunks, put olive oil in skillet, add chicken, a little garlic powder, onion powder, chilli powder, cumin, and paprika. Saute until done. Fill plate with lettuce, top w/beans of your choice, break tortilla in pieces over salad. Add salsa and Chicken. Yum!

Since you already baked the chicken the above will not work but try these ideas next time before you cook the chicken.

it's not really totally healthy...but I love chicken quedillas

cut up a grilled chicken breast in tiny pieces, and throw it on top of a tortilla with whatever cheese you want and stick another tortilla on top...stick in in the oven until it's as crispy (or soggy, if you like it that way) as you want.

I eat it equally unhealthy with lots of sour cream and salsa.


I'm sure there are healthier ways to make a quesadilla but this works quite well for a fatty-food loving, lazy college girl like myself haha

Dice the chicken and mix it into a bowl of brown rice with black beans, corn, salsa, a little shredded cheddar.

Dice the chicken and mix it into some spiral whole wheat noodles and top with your favorite spaghetti sauce.

Make a pasta salad with it

Slice the chicken into strips and put it into a whole wheat tortilla with pepper strips, spinach, avocado and some caesar dressing and then wrap it all up!

Dice it and stuff it into a pita with whatever else you like: cucumber, tomatoes, spinach, lettuce, peppers, pickles, sprouts, etc.... It might be good to smear a little cream cheese inside the pita first.

Dice it up and put it on top of a baked potato with broccoli and cheddar cheese.

Boil up some udon noodles and add diced chicken and veggies of choice.

Any tips for cooking chicken breast in such a way that the meat is moist and flavorful?

I love buying a roast chicken (my own never come out very good) but after eating the dark meat and meat near the bones, I am stuck with bland dry breast meat.

Once in awhile I get a chicken salad where the breast meat is actually moist and has some salt/flavor throughout ... I wish I could make that happen at home!

my favourite 'secret' marinade:
mix some dijon and honey, few tablespoons of each, then whisk in either mango or papaya juice ( I get it a Trader Joe's) orange juice Ok in a pinch but mango is the best...add spme pepper and maybe cumin and or curry seasoning....
then marinate it for a LONG time, overnight or a few hours...grill or bake....its great and the flavour goes right through, also good for tofu....

If it's really dry, you're cooking it too long.

If you are cooking just the breast meat, you'd be surprised how fast it cooks.

Most high end chefs work quite a bit under the govt recommendations for internal temps as well. Some has to do with allowing the meat to continue to cook for a few minutes after it's removed from the heat source, and some of it has to do with the govt's CYA factor.

As far as what to do with chicken breast to get away from the bland, I suggest changing the way you think about food.

Don't think of chicken breast as a slab of meat to be cut up and eaten in pieces like a beef steak, think of it as an ingredient.

Shred it and combine it with salad, couscous, brown rice, whole wheat pasta, etc, etc.

I just cooked for my SO: marinate the chicken in teriyaki sauce (the thick kind) with garlic salt, soy sauce and pepper. After a couple of hours of marinating-- coat a skillet with sesame oil - heat it up- place chicken in skillet and grill while drizzling extra teriyaki sauce intermittently. Grill until crispy and dark on outside.

i SWEAR by this.

sprinkle parmesean cheese and paprika on your chicken and broil.

it is HEAVEN and is SO juicy.

you also can add a tiny bit of shredded parmesean, too.

Dust the ch. br. with flour. Dunk in honey mustard dressing. Dredge in ground pretzels. Pan fry to crisp up the coating. Finish in oven. Serve deli-syle on a kaiser with lettuce, tomato, Swiss cheese and more honey mustard; dill, fries and 'slaw on the side.

Trim of all fat and skin, then put it in a baking dish and cover with salsa. I cover with aluminum foil, and bake. Remove the foil the last five minutes or so, and some cheese on top and melt.

Sooooo good. You can cut it up and mix it with brown rice.
