Need Easy Quick Lunch Ideas

Hi all,

Currently I am on an oatmeal kick. I eat a bowl of plain oatmeat when I get to work and then another bowl around 1 or 2. It keeps me from getting hungry and is easy and won't hurt my computer when I knock the bowl over. Another big plus is that it is low in fat and good for me. HOWEVER...I get bored with it and want something else but don't have time to do anything but run and grab something in the break room and run to back to my computer. Any suggestions on easy quick lunch/breakfast ideas?? Things that travel in the car well would be great as well since I am out in the field ALOT.

Simple stuff for me as far as breakfast goes is Dannon Light 'n Fit yogurt, and hard boiled eggs.

Lunch I usually have a good quality deli turkey or maybe a small can of tuna with some romaine, baby spinach, onion and green pepper wrapped in a La Tortilla garlic and herb wrap. The wraps are awesome - only 50 calories and 8g of fiber! Some assembly required, but super easy and healthy!

Otherwise I snack on a lot of fresh fruit which is always easy to travel with- apples, bananas, pears, cup of grapes, etc.

Sandwiches - PB & J, turkey, or made w/ lean roast beef or ham on whole grain bread.
Lofat Yogurt (w/ fruit if you want)
Fresh fruit
Cold cereal (preferably some sort of whole grain sort of thing - perfect to put in a bag and snack on).

I have turkey sliced in 1/4" thick slices and buy a bag salad and some lowfat dressing. I just tear or cut a slice of the turkey into a handful or two of the bag salad (about a third of a bag). Toss a little good dressing on and you have a lowfat lunch with protein and veggie serving. I have been eating this for lunch at work every day for the last three weeks. I actually look forward to it. Just buy what you need at the beginning of the week and throw it in the breakroom fridge.

I also bring berries, bananas oranges, whatever. Try to get my five fruit and veg in at work so anything I get at home is a bonus.

For breakfast, a bowl of Fiber One Honey Clusters with a tablespoon or two of granola for added crunch. Fiber One has 51% of your daily fiber. Good way to kick off the day. Throw a banana on top and skim milk or yogurt and you are set.

If you want something sweet I love Clif bars. Personal favorites are Chocolate almond fudge, Crunchy Peanut Butter. Or Kashi Trail Mix Cookies. Both are relatively low fat and a good dose of fiber. Beats a candy bar or fatty cookie.

I also saw Boca burger breakfast wraps that heat in microwave. They have flavor packs of tuna,salmon that you can heat and have with salad and some bread. If you like hot cereal how about cream of wheat or grits which I have never tried. Veggie burgers,grilled chicken,soup,healthier frozen meals like kashi.

My current lunch is super easy - spaghetti. I cook a lot of noodles on Sunday night (whole grain). The every morning I throw some in a tupperware container, dump on some sauce (huge fan of Muir Glen's fire roasted tomato), and I usually throw some thawed Boca Crumbles on top to add some protein. I used to add some fresh spinach that I microwaved for 15 seconds to wilt it. Now I eat my spinach as a salad on the side and maybe some fruit for something sweet. That seems to hit all the food groups and keeps me pretty full until I have my pre-run Clif Bar.

Here are some of my favorites, some, but not all of them you could pack & take in your car. Oh, and I'm vegan, so anywhere you see tofu or TVP, feel free to change it to whatever meat appeals:

Homemade pizza (parbake the crust, assemble and nuke at work)

Chard, tomatoes & white beans over polenta (cook a bag of TJ's swiss chard with a can of diced tomatoes & garlic, add a can of white beans...serve over ready made or homemade polenta)

Hummus & pita bread and/or cut veggies

Eggless egg salad (made with tofu) sandwiches

Vegetable soup with added beans or TJ's meatless meatballs

Black bean & roasted vegetable wraps (roast some winter squash/yams/parsnips/carrots, put in a low carb tortilla with canned refried black beans)

Baked sweet potatoes with black beans (canned, seasoned are great)

13 bean chili, by itself or over baked potato

Moroccan winter squash & chickpea stew (a great, easy crockpot recipe, I've posted it here before, so email me if you would like it)

TVP tacos

Split pea soup

Lentil soup

Burritos

I premake a huge pot of soup ever couple weeks, and put it in little 1 cup microwavable bowls. I usually can eat 3-4 of these during the day (at about 200 calories each) so I'm getting about 800 calories during the day. Breakfast is usually about 300 calories (with fruit ~400). Then dinner, is usually about 600 calories (unless I eat out, then its trouble).

If I'm on the go, no microwave, I'll eat a foil of tuna or salmon, couple boiled eggs or a clif bar and a v-8 (I know, too much salt, but I can't drink the low salt variety).

I like to grab different types of soup (the stuff you don't have to mix), in cans with the pull-tab lids. They run 150 to 250 calories, but you may have to read the labels to watch out for too much fat (salt can be problem with these, too, if you're concerned about that).

You mentioned the oatmeal, I buy the regular oatmeal (not "quick") and I eat it dry (trail mix without the mix). My wife thinks I'm whacko, but it's pretty good uncooked.

I pack my breakfast and lunch everyday.....can get boring. I do like to pack a low carb wrap for lunch....never get bored of them. The wrap I use is 80 calories, 6 net carbs, with 14 grams of fiber. I usually fill it with ham, turkey, egg salad, or chicken salad. It fills me up, and doesn't cost to much with the calorie bank!

My preference is to bring leftovers for lunch...I try to make enough so that there'll be some leftovers. However, that's a good day! Usually, I'll cut up some veggies and greens and put them in a wrap with mustard and some other condiments. Along the wrap theme, I'll also buy some pre-marinated tofu and use those in a wrap with some veggies. I always have some Amy's soups on hand and add some frozen veggies. Dr. Praeger (I think) has some great frozen Bombay veggie burgers that are so delicious...I'll take a frozen one to work and nuke it for a minute and add some fixin's with a bun or wrap that I bring from home. Make some extra rice and add some veggies and beans and seasonings. Like a previous poster does with pasta, you could do with rice...that is, making a big batch and then adding different veggies, protein source, sauces to it during the week so it doesn't feel like the same lunch day after day.

Can of Progresso soup, string cheese and an apple. Prob. a bit high in the sodium dept., but that's my old standby. Those little tuna fish and cracker things are good too but I have to eat something with them; they don't fill me up by themself.
