Summetime Sandwich Swap

Since summer is here (well, almost) I thought it would be nice to start a thread about the summeriest food of them all - sandwiches! Normal combinations or unusual layering, post 'em here for all to see and try.

My favorite:
Tomato & Mushroom

Spread mayo on both sides of bread
Slice roma tomato and arrange neatly on one piece of bread
Layer favorite fresh (not cooked) sliced mushrooms on other
Arrange bread end-to-end and close pieces like a book (keeps the goodies from falling off!)
Eat and enjoy

Well, I don't know if it's considered a sandwich but I like toasted onion bagels spread with lowfat or nonfat cream cheese (sometimes chive 'n onion light cream cheese), thin slice of vine tomato, and lox on top (thinly sliced smoked salmon). I'll eat that for dinner sometimes, for brunch or after a long run.

For sandwiches, I like egg salad or tuna egg salad. For tuna egg salad: white albacore tuna, flaked, chopped boiled egg, chopped onion, chopped celery, pickle relish, a little light mayo all on toasted whole wheat soudough.

Other times for snack, whole wheat bread with low fat chive 'n onion cream cheese and very thinly sliced cucumbers. My cucumber sandwich. Very English-style and a hot cup of tea 'n dash of milk to go with it. Deelish.

If I'm really splurging, I like steakhouse beef dips. Thinly sliced steak dipped in au jus, on crusty toasted roll, a little cheese and a smoothie to go with it. Yummeeee.

I spread both INNER sides, myself.....

My fave is always the venerable BLT! A close second is any kind of grilled cheese.

favorite lunchtime at work sandwich is:

2 slices multigrain bread
1 medium whole tomato, sliced thin
2 oz mozzarella cheese
basil
garlic salt or powder

arrange sliced tomatoes on bread
sprinkle cheese over tomatoes
top with basil and garlic powder

toast in toaster oven (oh, you know you have one at work, dontcha) til cheese is golden brown and melted.

smells like pizza, but feels healthier!!

Ok I gotta ask:
why cant you put the mushrooms on top of the tomatoes then you dont have to close it quickly like a book?

I love hummus and tabouleh sandwiches, on any kind of whole wheat or rye bread (Pigs Fly Bread is awesome if you can get it), traditonally this is on a pita but I dont like pita/wrap type sandwiches

or

spinach and hummus is a good combo on a sandwich too

my all time favourite though has got to be a fresh heirloom tomato toasted wheat bread, a schmear of mayo and fresh ground black pepper...or, fresh cucumber instead....mmmm....

I used to love cucumber and cc on kaiser roll growing up. Have you tried it with laughing cow cheese? Its a nice change from cc. Its not homemade but I love Panera sandwich/salads especially in the summertime.

Pleasantly surprised nobody put out the requirement that the sandwich be nutritious.

1. Braunschweiger, red onion and butter on a toaster waffle

2. Grilled cheese with cukes, tomato and bean sprouts

3. Grilled tuna steak with basil mayo on wheat

Some general notes about sandwiches. Before I started losing wieght (60 pounds so far) I put butter on EVERY sandwich I EVER made. It never occured to me that you could make a sandwich without it. If you spare the calories, next time you make a PB and J, throw some extra "B" on it for a whole new dimension of yum.

If you want something nutritions, a grilled portabella with mozerella, tomato, basil and onion is pretty darn good. It's best on wheat.

Here's my caveman contribution:

whole grain bread
thick layer of hummus
huge handful of spinach leaves

Smash sandwich down flat and enjoy! Tastes great, very healthy and takes about 10 seconds to prepare.

Braunschweiger is a sort of soft liver sausage, which in my opinion does not belong on a toaster waffle!!

Let's see... I like a whole wheat tortilla spread with almond butter, chopped apple, raisins, walnuts, and cinnamon, all rolled up.

Or a dark pumpernickel bagel spread with hummus, stuffed with tomato, sprouts, red onion, and spinach.

It's not a sandwich per se, but I like to take cold pizza in my lunch. You can be so creative with what you put on a pie and it usually always tastes great cold as leftovers. We make our own whole wheat crust and then just open up the fridge and see what we have to top a pizza. We have used BBQ sauce for the crust and then topped with tri-colored bell peppers, red onions, roasted chicken and cheddar cheese. Another concoction we tried was salsa for the sauce then topped with black beans, roasted chicken, jalapenos, black olives, tomatoes, mexican cheese blend. When we ate it hot we garnished it with lettuce, avocado and sour cream. Then, there's just the basic red sauce and cheese. Or, vegetarian is good too ~ olives, mushrooms, peppers, tomatoes, herbs, pineapple.

Innovative sandwich ideas for us basically consists of changing around the medium that holds the fixins. We use pitas, tortillas, rolls, savory breads in place of the basic wheat bread we usually use. Smear a whole wheat tortilla with PB, wrap a banana up in it. Stuff a pita with cottage cheese mixed with veggies like cukes, tomatoes, peppers, spinach. Whole wheat hoagie smeared with tomato-basil pasta sauce, then put motzarella or provolone cheese with spinach leaves, red onion, pepper rings, pepperoni or turkey pepperoni if you like.

Favorite summer sandwich- fresh off the vine homegrown tomato slices (these would be the big slicing varieties) on white bread with mayo, salt and pepper. Eat it over a sink because it can get messy...lol
