I think just the sides are good, as someone said.Here is a recipe for lentil loaf that is good....I agree, stay away from the fake stuff.

CANS Lentils (boil for approx. 5 min or until Lentils become soft)
TAKE OF STOVE AND DRAIN.

Saute 2 onions Chopped and 1 clove garlic in some oil

In a mixing bowl add:
1 tsp of yeast marmite to
sauted onions and garlic
add lentils
add 1 c. breadcrumbs
2 tomatoes, skinned and chopped
1 gr. pepper chopped
1 peeled apple chopped
2 eggs (beaten up)- that's my aggression coming out
salt and pepper
1/2 tsp marjoram
1/2 tsp sage
2 tsp parsley
and a little nutmeg

press into a loaf pan and bake for 50 minutes at 325-350.

Vegetarian Times usually has ideas for veggie Thanksgivings. They provide entire menus. The 2007 Nov/Dec issue is out now, and ones from years past will also have suggestions and menus, and can be found online (probably at findarticles.com)

Um, gathering around the table with family and friends and giving thanks for all of your happiness, blessings and good fortune.

If you're worried that you can't make a big enough meal using a vegan menu and skipping the big bird, you're missing the point.


That being said, you could always whip up a massive veggie lasagna using egg-less pasta ... That would be sure to send everyone into nap-time while watching the games.

Who needs turkey if there's pumpkin pie? The only problem is canned pumpkin is hard to find in the UK. I once found it at a food hall in one of the large department stores...John Lewis, I think.
