What to do with Leftover Turkey

My idea:

Slice it thickly. Dry thoroughly and use it as a heel lift.

Remove meat from turkey. Save carcass, boil it, make stock, de-fat. Re-add turkey meat, add leftover veggies such as corn, peas, cooked potato chunks, some small fresh diced tomatoes, 1/4 c. white wine if you have it, can add leftover pasta, make hodge-podge soup. Bring to boil, simmer, eat. Mmmm, so good.

Use extra meat for: tacos, turkey enchiladas, turkey pot pie, etc.
