Whats your favorite cookbook and why?

My friends and i exchange gifts every year and we have a theme. This year - it's cookbooks. So, i went to the cookbook selection and - well, there are a lot of cookbooks out there. So, thought i'd find out what you like best and glean from there.
Me, i use the Looney Spoons and Crazy Plates a lot. The girl i picked already has them - she's the one that got me into it. She likes to cook and doesn't mind to fuss, as long as it's not too much.

Joy of Cooking is my go to when it comes to wanting basic info. and a basic but traditional recipe.

When I'm cooking at my childhood home I always find myself using the The Silver Palate cookbooks my mother has ... just good recipes and also good info. re: roasting etc.

Finally, Cookwise is really fun for the chemist/Alton Brown type people ... for example it has a basic choc. chip recipe and then tweaks for crispy, chewy, and cakey (explaining how ingredients ... e.g. white versus brown sugar versus corn syrup) affect the final product.

Nigella Express is Nigella Lawson's new cookbook, and it's great. I've made several recipes from it, and they all came out really good. Granted, Nigella doesn't do much low-cal or healthy food, but it sure is tasty.

'Stay for Supper,' 'Mayo Clinic,' 'Southern Living at Home' cookbooks. I have so many.

Instead of cookbooks, I have a scrapbook/notebook of all my best tried 'n true family favorites. Many recipes are from my mother. I make those dinners just about every week. My kids love it. DH and I prefer the foolproof recipes, too. I'll try something new every now and then but I have so many recipes that I just rotate the ones that were a hit.

Any of the Moosewood Restaurant cookbooks would be a good choice. I love the Low-Fat favorites myself since it contains mostly vegetarian recipes.

"The Mediterranean Vegan Kitchen" - everything comes out really well, the recipes are very "down-home" tasting, but delicious. This is where about half of my dinner staples come from.

"A Fistful of Lentils" - a Jewish Syrian cookbook. I've only made half a dozen things out of it, but it includes my favorite recipe for my favorite food (mujadarah - lentils and rice with onions) and a lot of interesting ideas for the holidays which have changed the way I cook for Jewish holidays.

"Vegan Cupcakes Take Over the World" is making me fat, but is so good. First book I've used where the baking recipes are fool-proof.

I have about thirty other cookbooks which I almost never use. I also get a lot of recipes from epicurious.com.

I love the Barefoot Contessa cookbooks. The only one I don't have is Paris. I particularly like Barefoot Contessa Parties and Barefoot Contessa Family Style (her Chicken Chili rocks!). Her recipes are very straightforward and she does some truly elegant things with vegetables that have now become staples in my family. Buy one for yourself while you're at it!

I received "Baking Illustrated" for Christmas (http://www.cooksillustrated.com/bookstore_detail.asp?PID=247). I haven't tried any of the recipes yet, and I'm looking forward to doing so. I like watching America's Test Kitchen on PBS, so hopefully my results will be similar to their's.
