I am new to the multi-sport game but I am a former NCAA track athlete (sprinter) so i know how to train myself in general but i'm not sure what kind of workouts i should be doing,or how many i should be doing in one day and weather or not it's a good idea to do a swim a run and a ride all in one day while training?? ... any help greatly appreciated

There are two resources I'd point you to straight away if you are looking for very in depth information on how much to train, at what intensity, etc, that will take your athletic history into account:
Triathlete Training Bible- this book is hard core. Joe Friel will walk you through exactly what your training schedule will look like, based on a precise formula using your past training volume. Since you are a former NCAA athelete, you obviously have a huge volume of training already under your belt, so I think you'll appreciate Friel's approach
gTips- Gordo has a ton of articles (all free) from Nutrition to training to aerobic threshold. He's acheived a lot and is widely respected -- definitely check it out

Do you have particular races in mind? If you are just wanting to enter into the multisport world you may want to consider duathlons as well as tris. With your running background you could very quickly enjoy success in duathlons. The swimming will take a little more work if you don't have a swimming background so you could always mix it up a little with dus and tris to see which you like better.
