Superbowl Sunday Recipes

I'm not big on football, but I love the superbowl. Mostly because of the food -- there are always 100 different dips at superbowl parties. Here's my favorite "superbowl recipe."

 

Ingredients

 

 

 

  • Four Avocadoes, soft

  • ½ cup Cilantro

  • ½ red onion, minced

  • One whole large tomato

  • Juice from one lime

  • Salt or Garlic Salt to taste

 

Mash Avocados. Dice cilantro, onion, and tomato. Stir together, with lime and salt ....serve. Add a pinch of cayenne pepper or hot sauce for a little extra spice.

    7-LAYER DIP

     

    INGREDIENTS

     

    • 2 avocados - peeled, pitted and diced

    • 1 1/2 tablespoons fresh lime juice

    • 1/4 cup chopped fresh cilantro

    • 1/4 cup salsa

    • garlic  salt to taste

    • ground  black pepper to taste

    • 1 (8 ounce) container low-fat sour cream

    • 1 (1ounce) package taco seasoning mix

    • 4 roma  (plum) tomatoes, diced

    • 1 bunch green onions, finely chopped

    • 1 (16  ounce) can refried beans (Trader Jose’s refried beans w/ jalapenos are
                          best)

    • 2 cupsshredded Mexican-style cheese blend

    • 1 (2.25 ounce) can black olives - drained and finely chopped

     

    DIRECTIONS

     

    1. In a medium bowl, mash the avocados. Mix in lime juice, cilantro, salsa, garlic
                          salt and pepper.

    2. In asmall bowl, blend sour cream and taco seasoning.

    3. In a  9x13 inch dish or on a large serving platter, spread the refried beans.
                          Top with sour cream mixture. Spread on guacamole. Top with tomatoes, green
                          onions, Mexican-style cheese blend and black olives. Dig in with tortilla
                          chips.(!)

    Buffalo Chicken Wings

     

     

     

     

    • 24 chicken wing, rinsed and patted dry

    • 1/3 cup butter or margerine

    • 2 T. bottled Cajon Style hot sauce (3 T. if you're feeling strong)

    • oil for deep frying

     

    1. Split the chicken wings at the joints. 
           

    2. Remove and discard the wing tips. 
           

    3. Place the wings in a saucepan over
           low heat. 
           

    4. Melt the butter or margerine in a saucepan over low heat. 
           

    5. Add
           the hot sauce and stir until well mixed. (Start with 2 tablespoons and
           taste; 3 tablespoons makes a very hot sauce.) 
           

    6. Pour the hot sauce over
           the wings, stirring to make sure the wings are coated. 
           

    7. Let stand for
           about 30 minutes, stirring occasionally. 
           

    8. Heat the oil to 365º. 
           

    9. Fry the
           wings for 5 to 6 minutes, or until crisp and golden. 
           

    10. Drain on paper
           towels before serving.

    11. EAT!!

     

    Note: I am not going for healthiest recipe on this one. Enjoy!

    For this year's Super Bowl I think it'd be fitting to have a pot of New England clam chowder and a pot of Manhattan clam chowder!

     

     

    However, since I'm a Miami Dolphins fan, I'll just be sitting in a corner eating my dolphin-safe tuna sandwich...

    YUM! Toby, I LOVE 7 layer dip... one of my good friends is known for hers.

     

     

    As in,  "Hey Brian, I hear you met my friend Jess last week."

    Brian's Wife: Brian, you remember Jess.... the sweet girl who brought the 7 layer dip.

    This year I'm doing black and gold quesadillas.... basically quesadillas with corn and black beans. And lots of beer to get some carbs back after my 20 miler. Go Steelers!
