Hi! The meals you eat the night before won't "help" your run for the relatively short distance/time you'll be running, but eating or drinking anything that upsets your system can make you feel awful during a workout, obviously. Too much sugar and fatty foods make me feel sluggish. Again, just adopt healthy, balanced eating habits all (or the vast majority of) the time, not just before a run. Don't worry about increasing or eliminating any one food group.
I would advise against drinking a lot of water the night before. Instead, focus on keeping yourself adequately hydrated at all times. A good guideline that I've read many places is to pay attention to the color of your urine. Sounds icky at first, but it is a very helpful habit to get into, especially if you keep running beyond the C25K program and want to do longer distances. Dark yellow means you're not drinking enough. Nearly clear means you're drinking too much (yes, it is possible, and in extreme cases can be dangerous). Lemonade color is just right. This is good advice for any day, not just run days. I work at a computer all day and I tend to forget to drink enough, but I'm getting better. Good luck!
