I've never had this problem before, but lately, when I swim my foot cramps up. Doesn't happen right away. I swim through it, but it's annoying, and obviously hurts. Why does this all of a sudden happening consistantly? I stretch before I start my workout, so I'm not sure what else I can do.

Actually, swim cramping can be caused by plantar flexing in your foot. Basically your foot is constantly flexed back (straight line from knees to toes). You can try to relax your ankles more, so that your feet are not in constant flex.
