Coconut and pistachio cake - I had some recently, and it's the freshest, yummiest thing you've ever had.

    Mmm... I love those layered cookie bars where you make a graham cracker crust, then drizzle sweetened condensed milk on it, sprinkle coconut, chocolate chips, and walnuts on top and bake.

    Yum.

    Malibu is a good source of coconut.  Plus it's good for you.  It has less calories than beer or Big Macs.

    coconut milk in curry mmmmm, coconut flan, and i second the mailbu, its dangerously yummy straight, ive never tried the grapefruit and im glad to hear its a healthful addition to my diet ..... coconut counts as a fruit right

    How about a Coconut BEER?

    Mongozo brewery is launching a new beer at the end of May. Mongozo Coconut is an exotic beer with a fresh coconut taste. This beer has an alcohol content of 3.5 %. It can be enjoyed on a beer terrace, and it is also great in combination with exotic food, for example. Mongozo Coconut is truly different as it can be drunk from a coconut shell.

    Mongozo is the trade name for exotic beers. The Mongozo company brews beers that bring together the ingredients, recipes, brewing techniques and drinking habits from many different cultures. The most important ingredients come exclusively from exotic sources. Mongozo Coconut is the fourth Mongozo beer to be introduced. Mongozo Palmnut was the first, followed by Mongozo Banana and Mongozo Quinua. Coconut beer is brewed on a small scale in Kenya. Mongozo Coconut is brewed using an original Mongozo recipe.

    I like fresh coconut but can't stand it any other way (baked in to cookies or cakes, for example).

    I had the finest coconut cream pie ever at The Creamery in Danville, VT.  I highly recommend it.  The meringue was at least 5" high!  The restaurant's owner's mother (in her 80's) makes all the pies they serve.  Even the crust was delicious, and that's not easy to do.
